Yolo County Craft Barrel Aged Gin™ is made from a base blend of sourced and house-made grain spirts for a specific profile. Distilled in a pot-column hybrid still with juniper, coriander, cubeb, orris, licorice, citrus peel, cassia & lavender. The new-make clear gin is then aged in used bourbon barrels for up to 12 months. The barrel aging adds a honey color and vanilla and toasted oak sweetness to the gin botanicals.
